We are presented with a list of displays, descriptions, and titles. Each description contains two sets of blanks. As this is the natural history wing, the first blank describes a fictional creature, which can be filled in using the clues. This can also be translated into a pseudo-scientific name by taking three affixes from the list of titles. (See a list of commonly used taxonomic affixes here.)
Each of the English descriptors can also be anagrammed to form a phrase that describes one of the displays (as hinted by "jumbled up" in the flavortext). The displays are ordered alphabetically to aid solving. (See Appendix)
Once we’ve matched up the image displays with the English descriptors, we can index the given number into the scientific name.

The extracted letters, when sorted by description order, give us one final clue phrase: ARTFREEBETA / MOLATAUROCARN. This is a do-it-again step where we can interpret ART-FREE BETA as the anagram (matching the final image display) and MOLATAUROCARN as the definition. MOLA means grind, TAURO means bull, and CARN means meat, cluing the final answer BEEF TARTARE, a dish made of raw ground beef.
